caviar sealed in jars and then immersed in a water bath at about 60°C. The jars are labeled in traditional colors: sevruga (red), oscietre (yellow), beluga (blue). Pasteurised eggs may be firmer and will keep unrefrigerated for up to one year but, once opened, need to be consumed within a few days
